    5400 vs 7200

5400 RPM SATA hard drive vs. a 7200 RPM SATA hard drive... doing mostly photoshop and rendering work... will I actually notice a difference worth $79 dollars?

For Photoshop work, I'd say no (unless you don't have enough RAM and are using Disk Space as your Cache).  You would notice the difference if you were trying to capture video, you'd notice a lot of dropped frames where your hard drive might have problems keeping up with the data rate of the video coming in.
